Food-Grade vs Pharma-Grade Citric Acid: What Actually Differs

Published 1 November 20265 min readBy Rimaan Royal Quality & Sourcing Team

Citric acid is citric acid — but "food grade" and "pharma grade" are not interchangeable labels. The molecule is the same; the documentation, specification control, and handling discipline behind the label differ. Buying the wrong grade is rarely a safety problem and almost always a documentation and audit problem. Here is what the label actually changes.

What is the same

The chemical identity: citric acid, CAS 77-92-9, formula C6H8O7. Both grades acidify, chelate, and preserve. In many formulations either would perform identically in the process itself.

What differs

AspectFood gradePharma grade (IP/BP/USP)
Primary buyer gateFSSAI-compliant food productionPharmacopoeial compliance and QA approval
DocumentationCOA + MSDSCOA + MSDS plus pharmacopoeial conformance documentation per batch
Specification controlFood-safety parametersTighter impurity profile and batch-to-batch consistency for formulation
HandlingFood-hygiene storageControlled storage with traceability for GMP records
CostLowerHigher — reflects QA and documentation overhead

Which grade do you need?

  • Food and beverage production → food grade, sourced from an FSSAI-licensed supplier.
  • Pharmaceutical or nutraceutical formulation → pharma grade (IP/BP/USP) with full batch documentation.
  • Cosmetics → typically cosmetic-grade requirements; confirm the specification with your formulator.

Three documentation habits that protect you

Whatever grade you buy, standardise three habits: collect the batch COA at delivery, keep the SDS with your safety files, and confirm the grade on the invoice matches the grade on the label. These three steps satisfy most supplier-evaluation checklists used by QA teams — and they take minutes.

Frequently asked questions

Can I use food-grade citric acid in pharma applications?+

Only if your specification and regulatory pathway explicitly accept it. Most pharmaceutical buyers require pharmacopoeial grade with per-batch conformance documentation.

Does pharma grade taste different from food grade?+

No. The functional difference is documentation, specification control, and traceability — not flavour.

How do I request the right documentation?+

Ask for the batch COA and, for pharmacopoeial grades, the conformance statement with your order — before dispatch, not after.
